Polynesian Chicken with Apricot Sauce

 

6 6 oz. Boneless, Skinless Chicken Breasts
1 Cup Carbotrol #10 Can Pineapple Chunks
1 Cup Green Bell Pepper cut into 1" slices
1 Tbs Vegetable Oil
1 Cup Fruitblendz 68oz. Apricot Sauce
1/2 Cup White Wine Vinegar
1/2 Cup Ketchup
1 Cup Brown Sugar
1 Tsp Worcestershire Sauce
1/4 Cup Soy Sauce
1/2 Tsp Pepper
2 Tbs Cornstarch
2 Tbs Cold Water
1 Cup Celery, cut into diagonal slices
3/4 Cup Onions, cut into 1" strips
1/4 Cup Toasted Almonds

Prepare sauce and set aside.

In a large saucepan, combine all sauce ingredients except cornstarch and water. Heat and simmer for 5 minutes to blend flavors. Stir cornstarch and cold water together until cornstarch is dissolved. Stir mixture into sauce, blending well. Simmer until sauce is thickened. Set aside and keep warm.

Prepare chicken and vegetables. Spray a baking pan with non-stick cooking spray. Lay chicken breasts on bottom of pan. Bake in a 350 degree oven until internal temperature of chicken reaches 160 degrees. While chicken is baking, prepare vegetables. Spray large frying pan with non-stick spray. Add vegetable oil and heat. Saute vegetables until al dente. Vegetables should be bright and crisp. Add pineapple chunks and toss to warm. 

Pour sauce over chicken breasts. Sprinkle vegetables and pineapple over chicken and sauce. Sprinkle toasted almonds over all. 

Serve accompanied with white rice (Jasmine is wonderful)"
